{"id":15079,"date":"2018-04-02T18:35:20","date_gmt":"2018-04-02T17:35:20","guid":{"rendered":"http:\/\/www.epicentrum.be\/home\/?p=15079"},"modified":"2018-04-02T18:35:20","modified_gmt":"2018-04-02T17:35:20","slug":"inspiratie-recept-ei-muffins","status":"publish","type":"post","link":"https:\/\/www.epicentrum.be\/home\/2018\/04\/02\/inspiratie-recept-ei-muffins\/","title":{"rendered":"Inspiratie &#8211; recept: Ei muffins"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong><em>Een ideaal recept voor een gezonde brunch of lunch na de paasdagen!<\/em><\/strong><\/p>\n<h4><\/h4>\n<p>&nbsp;<\/p>\n<h4 style=\"text-align: center;\"><span style=\"color: #a0cc31;\">Wat heb je nodig?<\/span><\/h4>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><em>voor ongeveer 8 ei muffins:<\/em><\/p>\n<p style=\"text-align: center;\">6 eieren<br \/>\nklein scheutje (plantaardige) melk of room (koemelk, rijstmelk, amandelmelk, havermelk,..)<br \/>\nongeveer 200 gram groenten in kleine stukjes*<br \/>\n1 tl bakpoeder<br \/>\nwat geraspte kaas of kleine stukjes mozzarella<br \/>\nscheutje olijfolie<br \/>\nverse bieslook<br \/>\nandere kruiden naar smaak<br \/>\nzout &amp; peper<\/p>\n<p>* Ik gebruikte zoete aardappel, cherrytomaatjes en erwtjes. Maar je kan in deze ei muffins allerlei groenten kwijt. Andere opties zijn: courgette, spinazie, paprika, ui, avocado.<\/p>\n<p>** Ook lekker: voeg er wat gerookte zalm aan toe en ipv de geraspte kaas wat bourcin<\/p>\n<p>*** Tip: kies voor biologische eieren van kippen die buiten lopen en gezond voer krijgen. Biologische eitjes hebben een code die start met 0BE<\/p>\n<p>&nbsp;<\/p>\n<h4 style=\"text-align: center;\"><span style=\"color: #a0cc31;\">Zo ga je te werk<\/span><\/h4>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">1. Verwarm de oven voor op 180 graden.<br \/>\n2. Was de groenten en snijd ze in kleine stukjes.<br \/>\n3. Meng de eieren samen met de melk en olie goed door elkaar.<br \/>\n4. Zet muffinvormpjes in een bakvorm en vul de vormpjes met de groenten. Strooi er wat geraspte kaas over of doe er een paar kleine blokjes mozzarella bij.<br \/>\n5. Meng nu het bakpoeder, de fijngesneden bieslook, peper, zout en eventuele andere kruiden door het eimengsel.<br \/>\n6. Schenk het eimengsel over de groenten\u00a0en vul de vormpjes tot ongeveer driekwart.<br \/>\n7. Zet de ei muffins voor 20 min. in de oven. Opgelet! Haal ze niet meteen uit de oven als ze klaar zijn, want dan vallen ze in. Laat ze eerst even afkoelen met de ovendeur op een kiertje.<br \/>\n8.
