{"id":14111,"date":"2016-12-06T08:41:03","date_gmt":"2016-12-06T07:41:03","guid":{"rendered":"http:\/\/www.epicentrum.be\/home\/?p=14111"},"modified":"2016-12-07T14:05:05","modified_gmt":"2016-12-07T13:05:05","slug":"inspiratie-recept-courgette-of-aubergine-met-mozzarella-in-de-oven","status":"publish","type":"post","link":"https:\/\/www.epicentrum.be\/home\/2016\/12\/06\/inspiratie-recept-courgette-of-aubergine-met-mozzarella-in-de-oven\/","title":{"rendered":"Inspiratie &#8211; recept: Courgette of aubergine met mozzarella in de oven"},"content":{"rendered":"<p style=\"text-align: center;\"><em>E\u00e9n van mijn lievelingsrecepten: overheerlijk, gemakkelijk, koolhydraat- en glutenvrij! <\/em><\/p>\n<p style=\"text-align: center;\"><em>Ik baseerde het recept op het principe van een courgette\/auberginelasagne volgens Pascal Naessens, gecombineerd met een tip van een vriendin.. <\/em><\/p>\n<p style=\"text-align: center;\"><em>en maakte er een eigen versie van!<\/em><\/p>\n<p>&nbsp;<\/p>\n<h3><span style=\"color: #a0cc31;\"><strong>Ingredi\u00ebnten (2 personen):<\/strong><\/span><\/h3>\n<p>&nbsp;<\/p>\n<ul>\n<li>2 courgettes of aubergines<\/li>\n<li>twee pakjes (buffel)mozzarella<\/li>\n<li>1 rode paprika<\/li>\n<li>20-tal kersttomaatjes<\/li>\n<li>2 eetlepels pijnboompitjes<\/li>\n<li>1 teentje knoflook fijngeperst<\/li>\n<li>1 kleine of halve ajuin<\/li>\n<li>olijfolie<\/li>\n<li>zwarte peper, zeezout\/kruidenzout en kruiden naar smaak<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><em>** Meer info over waarom het gezond is om koolhydraten (pasta, rijst, aardappelen,&#8230;) niet te combineren met groenten en eiwitten (vlees, vis, kaas,&#8230;) kan je terugvinden in dit blogartikel <a href=\"http:\/\/www.epicentrum.be\/home\/2016\/01\/30\/inspiratie-recept-bloemkool-couscous\/\">&#8216;bloemkoolcouscous&#8217;<\/a>.<\/em><\/p>\n<p>&nbsp;<\/p>\n<h3><span style=\"color: #a0cc31;\"><strong>Zo maak je het:<\/strong><\/span><\/h3>\n<p>&nbsp;<\/p>\n<p>Vet een glazen ovenschotel in met olijfolie.<\/p>\n<p>Was twee courgettes of aubergines en snij ze in de breedte om de kleine centimeter in tot bijna beneden, maar net niet helemaal door.<\/p>\n<p>Besprenkel ze met olijfolie.<\/p>\n<p><a href=\"http:\/\/www.epicentrum.be\/wp-content\/uploads\/2016\/12\/IMG_2509.jpg\"><img loading=\"lazy\" class=\"size-medium wp-image-14114 aligncenter\" src=\"http:\/\/www.epicentrum.be\/wp-content\/uploads\/2016\/12\/IMG_2509-300x225.jpg\" alt=\"img_2509\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.epicentrum.be\/wp-content\/uploads\/2016\/12\/IMG_2509-300x225.jpg 300w, https:\/\/www.epicentrum.be\/wp-content\/uploads\/2016\/12\/IMG_2509-768x576.jpg 768w, https:\/\/www.epicentrum.be\/wp-content\/uploads\/2016\/12\/IMG_2509-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Snij de rode paprika in de helft en verwijder de zaadlijsten. Leg de paprika mee in de glazen schotel.<\/p>\n<p>Zet deze schotel ca. 30 minuten in een voorverwarmde oven op 190 graden.<\/p>\n<p>Snij ondertussen de mozzarellabolletjes in dunne schijfjes.<\/p>\n<p>Na 15 minuten kan je de paprika uit de oven halen en samen met een tiental kersttomaatjes, de pijnboompitjes en eventueel knoflook en ajuin in de blender mixen.
